Det Glade Vanvid was created by the Koch Brothers with the desire to create the complete restaurant experience.

It had to be sumptuous. Everything had to be top shelf, except the price - the price had to be the hospitality itself, just like the atmosphere and hosts.

The starting point was clear, and is still the focal point of the experience we want to offer our guests: Everything you don't want to do without is there. And everything you can only hope for is a given.

Age: 26 years old

What are your tasks at Det Glade Vanvid?

In short, I cook. At DGV, the students are lucky enough to get their hands on everything. By the end of a menu, everyone has pretty much tried to make everything on the menu. I think that's really cool, and it helps us as trainees to move forward incredibly fast.

What time of your working day do you appreciate the most?

Evening service is the coolest, I like to get out to the guests and talk to them about the food.

How does the team you are part of work in the kitchen?

Our Head Chef Jens is our top manager, and then there is a sous chef. In addition, we are 4 trainees, and the oldest trainee gets a little more responsibility than the others. But we all help each other and have a really good team spirit. We chef trainees also have a food club together in our spare time.

How did you become a trainee at Det Glade Vanvid?

I was recommended by my school and then I called Jens Brøgger. I had a chat with him in the restaurant and I tried a shift in the kitchen. I could feel the unity in DGV right away, and that's what appeals to me about the industry. For me, it also means a lot when Michael or Lasse Koch come into the kitchen, they are a great inspiration to me, and their large network in the industry and their experience is really noticeable.

Do you have a dream or goal for the future professionally?

I would like to go out into the world and work, maybe with Michelin, maybe something completely different. I would also like to do a postgraduate course as a sommelier when I finish my chef's degree.

I'm on Main Course 1 now, and I've been with DGV for 9 months.

What are your tasks at Det Glade Vanvid?

I do many different things. For example, I bake bread, prepare meat and make crumble. I also get other small tasks throughout the day. At around 16:00, we clean and then have a break afterwards, where we eat with the waiters. Even though it can be hard work sometimes, I have also gained a lot from being in DGV, which I can feel when I'm at school now. I've moved on a lot since I started.

What part of your working day do you appreciate the most?

I like service the most, it's fast and busy. But I also quite like doing all the tasks during the day where we can go and chat in the kitchen.

How does the team you are part of work in the kitchen?

We have a good team, both in the kitchen and with the waiters. We sometimes do something nice together in our free time, for example, I've been out to lunch with the other chefs.

How did you become a trainee at Det Glade Vanvid?

I saw an ad on Facebook that they were looking for trainees in Viborg, so I sent an application. I was called in for an interview, and then I started up slowly. I helped open the restaurant in Viborg, so we unpacked in the kitchen and cleaned.

Do you have a dream or goal for the future professionally?

Yes, I have a pretty set plan. I would like to work for a year and then I would like to travel and work abroad as a chef. I hope to travel to Australia and Japan.

We have a close collaboration between all our restaurants and our administration office, located in the heart of Aarhus, which ties the practical loops on the challenges you may face in everyday life.
